They are great for non-stick pans, but they can be used on most cookware like iron skillets or stainless steel. Most people have some form of non-stick cookware. Taking care of non-stick cookware needs some diligent consideration. Since metal or stainless steel is not an option for non-stick, that leaves three choices: wood, nylon or silicone.
Wooden utensils are great. But maybe just for stirring salads. Their maintenance needs a lot of diligence. Taking proper care of wood can be a pain. So that leaves silicone and nylon cooking tools. Silicone and nylon seems to be similar but they do have noticeable differences to consider.
Nylon will melt around 400° F. while silicone can withstand up to about 600° F. (this may differ between brands of course). Keep in mind, the heat of the pan not the food. Cookwares do reach high temperatures where a nylon spoon against the side of a hot pan may melt. But it's rare that a pan gets over 600 ° F. It is unlikely (but not impossible) that a silicone utensil will show signs of melting at 600 ° F.
So, are silicone utensils better than nylon utensils all the time? Well, no. Silicone is great for scrapers or spoons where they would need to be pretty thick. Which is why it's good to have variation in your kitchen. Silicone has greater heat resistance but less rigidity, so thick silicone utensils will provide the lacking firmness. On the other hand thin silicone utensils like silicone turners are floppy and flimsy and defeat the purpose of their function. To over come this problem, manufacturers have to coat metal with silicone in order to create a firmer more durable turner that won't damage cookware.
The problem with this is that the silicone layer has to be very thin in order for the turner to slip under the item in the pan. Of course this will cause it to get worn off fairly quickly. And then the inevitable happens. A horrible metal scratch on your non-stick pan.
So for pancake turners, nylon turners seem to work best. I would just be very careful not to leave them in contact with the pan any longer than absolutely necessary.
