It is well known that Red Wine needs to be Decanted to let it "breath" so the wine "opens up" and its inherent aroma and boutique can be experienced and the wine can be enjoyed at its best. The only problem is that this takes time, a lot of time, up to 6 or 8 hours for a more mature complex French Bordeaux or Cabernet Sauvignon from Napa Valley. So the solution has been the development of Wine Aerators. Traditionally these have been a simple arrangement where wine is pored through a vessel that draws air in at the same time and rapidly aerates the wine, these are still around and sadly are still being sold in large numbers. Some manufactures have improved that older design with a 3 stage aeration, adding more air over a longer cycle and at a "softer" rate, but still limited to the same rate of aeration for all wines.
The Bacchus has taken all of that to a new level. Three stage wine aeration to maximise the duration of the process, but importantly now controlled by a variable speed dial that the user changes to suit the type, age and style of the wine. This means that a new perfectly aged quality wine can still have a light aeration so to be totally opened up i.e. a dial setting of 1 or 2. But then a very new and still rough wine can be aerated at a 6 setting to fully aerate it and have it up to its potential in a matter of seconds.
The second huge benefit is of course that the aeration can occur at a glass by glass basis. So a bottle of wine can be drunk over two or even three nights but each glass is aerated to be at its perfect condition.
